Porchetta, a roast pork dish that dates back to the days of ancient Rome and a1)reminder of the2)decadence that led to the empire’s fall.

An army runs on its stomach and no army ate more or better than the Roman3)legions. But one dish in particular always4)bolstered the troops’5)morale, a dish so delicious that today Romans eat it by the ton. It’s called porchetta, pork slow-roasted to fork-6)tender perfection.

Roman Citizen: I could not imagine Rome without porchetta. It’s a tradition, I think.

And this is where all Rome’s porchetta comes from today, the7)suburbs of Arrichi on the northern8)edge of the city. Leopardi’s roasts up to 400 porchetta a day and they’re just one of 17 places doing the same thing.

True porchetta can only be made in Arrichi and it has to be done like the old Romans did it.

First, you9)debone your pig.

Erica Firpo (Travel Writer): It takes 30 seconds to debone this section of the pig and it becomes an art form.

Then add salt, by the handful.

Erica: You’re putting about half a pound of salt on the porchetta so it’ll keep it really nice and juicy so that we bite into it, we’re gonna to want to bite it more.

Now some black pepper.

Erica: Oh, my God. Oh, these smell amazing. I think I’ve died and gone to porchetta12)heaven. It’s been just cooking all the juices, the13)spices, the salt, to create the perfect porchetta.

Every year, Romans14)devour 550 tons of roasted pork. And some of it ends up at La Fraschetta.

Erica: This place is the15)quintessential porchetta place. It’s cheap, it’s basic, it’s the colours of Roma, the soccer team, which are orange and red, and it’s just got the best porchetta.

They start with sliced bread, then add cheese from Venice, slices of porchetta, local greens and cherry tomatoes. Simple.

Erica: This is a really good sandwich. I’m happy. I wouldn’t get this anywhere else in the world ’cause I know it’s not going to be as good as they have it here. Only for Rome.
