无笋不成席

過去,梨乡莱阳按习惯以火车道为界,分南半县和北半县,简称南乡和北乡。虽同为一县,但改革开放前,宴席的讲究却有许多差异。

以先上的四道菜为例———北乡是“一鸡二笋三汤四肉”,后面几道菜随意上,最后是有鳞的鱼(黄花、加吉、“寨花”(音)等均可,品种要求不那么严),整个宴席是“鸡开头”、“鱼扫尾”,意即“开头大吉”、“年底有余”。其中第二道菜是竹笋,很有讲究。“笋”即“顺”且有“节”,取“节节和顺”之意;如无笋,客必有非议。所以,北宴是“无笋不成席”。

而南乡的前四道菜则是“一鸡、二合菜、三鱼、四埋汰(即大肉)”,后面的几道扫尾菜则随意,但对鱼的品种要求较严,必须是有鳞的“五龙鲤”(以四个鼻孔的为最佳),俗称“无鲤不成宴”。全席没有竹笋,异于北乡,与莱阳的邻县像栖霞、海阳、招远以及芝罘、福山等地一样——不认竹笋。个中缘由,无从探究。

据传,莱阳北宴食竹笋的历史不算长,大约百十年。当年,有北乡人在江南做生意,将竹笋及食用方法带回来。由于味美价廉、做法简便,曾在北乡风靡一时。

关于吃竹笋,民间流传一个笑话:竹笋传入初期,北乡许多村庄不知笋为何物。一天,有位老汉到相距五六里路、同是莱阳北乡的新女婿家“出门”(串门)。午宴十分丰盛,老汉很满意,尤其第二道菜炒竹笋,味道鲜嫩香脆,他从没见过,一尝赞不绝口。想打听一下亲家,又不好意思,就瞅空问了问女儿。但女儿刚过门,对此也不甚了了,只告诉爹:“用干竹子泡半个月,然后截成段,加肉炒……”

老汉回家后,把女儿说的做法照搬出来。儿子小两口对炒竹笋虽然陌生,但一听介绍,觉得容易。他们拆了一张旧竹筢泡在水桶里,半个月后,将筢齿剁成一指长的段,然后,加上不少肉,炒得喷喷香,端到饭桌上。老者一看这盘“炒竹笋”与女儿家的不一样,心里犯了嘀咕,嘴上却没说什么。诱人的香味使他顾不得多想,搛了一大口“竹笋”品尝起来。突然,咽喉被一截筢齿卡住了。只见他张着嘴、瞪着眼、用筷子指着盘子里的竹笋说不上话来。

儿媳以为他还要,忙把剩下的“竹笋”全盛出来,边往盘子里拨边说:“爹,使劲吃,别舍不得,南屋还有两张才买的新筢呢。”

这个笑话,形象地反映出竹笋引进莱阳北乡初期的流传情状。

炒竹笋,在莱阳北乡曾是一道佳肴。除了泡制较繁琐外,其选料和烹调方法并不复杂。一是选料,最好是干透了的嫩笋芽,形状厚墩,颜色金黄,节纹密集,笋肉细嫩;泡制好了,一斤笋干可出五斤左右湿笋片,做成菜肴鲜嫩可口;而那种老的笋干,颜色灰黄,节纹宽疏,笋肉粗糙,出菜率和味道均不如笋芽。二是泡制。先把笋干在水桶里充分浸泡,以刀能切成片为准,再切成薄片(越薄越好,现可用机械将干笋切成片),浸两天左右,即可食用。三是烹调。先炒肉片,再用葱、姜、醋爆锅,然后放入竹笋炒熟,出锅前撒上适量的盐、味(鸡)精和香菜段,一盘香脆鲜嫩的炒竹笋就成了。

改革开放以来,梨乡宴席与外域一样,今非昔比:南鲤上了北乡的餐桌,北笋成了南乡的佳肴;而“一海鲜(包括虾、参、蟹、鲍以及有鳞鱼等)、二鸡、三肉、四笋、五汤”等时髦菜谱取代了传统的十碟八碗;鲜竹芽、芦笋等味美价廉,顶替了那泡制工艺繁琐的干竹笋,等等,不一而足。是的,社会发展了,宴俗岂能不变?然而,当年炒竹笋那鲜嫩香脆的味道,仍留心间,挥之不去。

Although belonging to the same the county, Nanxiang and Beixiang had quite different customs in terms of feasts before the implementation of the reform and opening-up policy.

Take the first four dishes as an example. In Beixiang, they are served in the order of “chicken, bamboo shoots, soups, and meat”, followed by other dishes that can be served at random and ended up with scaled fish (such as yellow croaker, red snapper, and weever). The entire feast begins with chicken and end with fish, implying “good luck” and “great abundance”. As the second dish, bamboo shoots (Zhu Sun) also have important implications. In Chinese “Sun” is similar to “Shun” in pronunciation, which means “smoothness”. Besides, bamboo shoots have joints, symbolizing that “everything goes smooth all the way”. If there were no bamboo shoots at a feast, there would be criticism from guests. Therefore, no bamboo root makes no feast in Beixiang.
