Eel fried rice, more than
a local delicacy

Located in Taishan, Jiangmen City, a famous home of overseas Chinese, is known for eel fried rice(黄鳝饭). With fertile rice fields and interconnected streams, the people of Taishan cleverly make delicious food out of natural ingredients.
The history of eel fried rice can be traced back to a long time ago. It is said that a fisherman came home from fishing and had no time to cook dinner for his children, so he tore the eel and cooked it in a pot together with rice, chopped green onion and so on. The original eel fried rice was done and its aroma wafted all over the village. Since then, eel fried rice has become a local delicacy.
The approach of making delicious eel fried rice is not difficult. First of all, cook the eel briefly in boiling water and then tear the meat apart. And then cook the rice with the water that just boils the eel. Next, cook the rice till its almost done and fry the eel meat. Finally, stir?fry the eel and rice well and add chopped green onion, cilantro and sesame oil and continue to stir?fry.
We are what we eat. Although nowadays a number of local delicacies are available everywhere, eel fried rice is still irreplaceable for many overseas Chinese, because it is closely related to the memories of their childhood as well as hometown.
