Stewed Mutton
(Qingdun Yangrou)
Ingredients
500g. mutton
1 turnip, 1 piece of ginger, garlic shoots
8 red dates, 1 star anise
Seasoning
1 cup of rice wine, 1 pinch of salt
Method
1. Rinse and cut the mutton into pieces, then blanch. Pare and cube the turnip, cut the ginger into slices and the garlic shoots into sections. Soak the red dates in water.
2. Stew the mutton in water together with the rice wine, red dates and star anise, and bring to the boil. Turn to low heat and cook for 1 hour, then add the turnip until the mutton is soft and done. Add salt and garlic shoots and serve.
